Our version of the classic Eton mess with our twist of pomegranates, rose water infused cream and pistachios. So simple to tumble together but will leave your guests wanting for more.

THE SHOPPING LIST
small drizzle of rose water
Punnet of organic strawberries, hulled and sliced
Small punnet of raspberries (optional)
meringues nest (good quality shop-bought is fine), broken roughly
handful pomegranate seeds
couple pinches of rose petals
handful of Pistachio slivers
sprigs of mint (optional)
Whisk the cream until it forms soft peaks
Fold in gently the icing sugar and rose water
Assemble either in a large dish or individual glasses, it's up to you.
Place the strawberries & raspberries at the bottom of the glass or dish
Add a few pieces of the broken meringues
Spoon over the cream and tumble in the pomegranate seeds.
Repeat with another layer if the glass or dish permits it
Sprinkle with the berries, pomegranate seeds & sprig of mint
Finish with pistachio slivers for colour, and rose petals for aroma
Iced black tea with rose water, crushed ice, mint and sprinkling of rose petals
